If you cut your daily carbohydrates, after a few days, your body will start breaking down protein and fat for energy and it will make you lose weight.

  • What do you eat?

Keto diet is based on high-fat requirements. Look at unsaturated fat food such as nuts, seeds, avocados, tofu and olive oil, or saturated fat food such as oils, lard, butter and cocoa butter.

Proteins are also part of the keto diet, such as eggs, beef, pork, and bacon.

Regarding fruits and vegetables, for veggies you can eat kale, spinach, cauliflower, broccoli, brussels sprouts, asparagus, bell pepper, mushrooms, cucumbers, onions, garlic and other leafy green vegetables or those less rich in carb. As for fruits, it will be similar, though you can choose fruits such as berries (raspberries, strawberries…) or peaches, cantaloupe, lemon, watermelon. Avoid any fruits rich in carbs.

  • What are the Pros?

You will lose weight in the short term, and certain people with some health conditions (bad cholesterol, acne, epilepsy, other nervous system disorder) might have some benefits.

  • What are the Cons?

In the long run, there can be side effects such as fatigue, headaches, irritability, kidney stones, indigestion, or constipation. Always be aware of how you feel when trying a diet like this. If you get side effects, we recommend you to try something different.

Chia seeds: so tiny and so powerful!

Did you know that Chia seeds were originated from Mexico and Guatemala, from a plant called the salvia hispanica? In fact, they used to be the staple food from the ancient Aztec and Mayans and were actually called “strength” in mayan.

Nowadays, Chia seeds are one of the healthiest food on the planet especially as they are loaded with nutrients that can benefit your body and your brain. This is because these tiny black and white seeds are full of healthy fatty acids-omega-3, carbohydrates, protein, fiber, antioxidants, minerals (such as magnesium, calcium, iron, manganese and phosphorus) and vitamins B. Plus they are gluten free and great for vegan diet!

Chia seeds are so natural and an unprocessed, whole-grain food that can be absorbed by the body just as seeds (unlike flaxseeds). They even provide more calcium, phosphorus, and fiber than flaxseeds.

This is very beneficial to your daily needs and most people do not consume enough of these essential nutrients.

Of course, we all know the benefits of plantbased foods. They are good for your overall health in the sense that they reduce the risks of many health conditions, including obesity, diabetes, heart disease, stroke or other serious health conditions. Thus, eating the minimum daily recommended amount is very important for our body, so think easy and eat chia seeds.

It's easy to find them, as they are accessible in shops or online and so convenient to eat or use, with just a sprinkle, you can get your daily needed nutrients.

How to eat them? Your choice…either raw or cooked, but they should be added to another food. What is the magic with bicarbonate?

Do you know the health benefits of bicarbonate? This question popped up when a colleague of mine told me that bicarbonate can help to cure my heartburn. So, I asked myself, what is the magic with bicarbonate? I started to research and here are some of the findings that came up regarding the health benefits of bicarbonate.

First of all, bicarbonate is a natural product! It´s a SALT. Also known under the name Sodium bicarbonate, NaHCO3.  You find bicarbonate in all seas, watercourses, and in the ground. But also, you find it in our bodies!

Bicarbonate has a healing effect. Here are just some examples of benefits when drinking bicarbonate with water:

  • Bicarbonate is a byproduct of our own metabolism. It regulates the PH-value in the saliva and helps against tartar.
  • It regulates acidity in the stomach and helps to prevent heartburn. It also reduces inflammation and gases by helping the body to digest the food. Normally the body can regulate the acid-base balance by itself, but you can help the body by eating food that is base-forming, which bicarbonate is. Bicarbonate has PH 8 mixed with water. It is slightly alkaline.
  • It is very good for the PH value in the stomach because it changes the PH value balance and increases the oxygenation of the cells. It helps the body with oxygen uptake. The PH value in your stomach should be around 1,7-2 (very sour!)
  • If you have been eating a little bit too much, then you can try to drink a glass of water with bicarbonate about two hours after eating. That should regulate the acid and help against heartburn! Almost all food processed in our body creates acids. This is natural. But if you drink water with bicarbonate, you can neutralize the acids and regulate your PH value. It helps the stomach to create a better environment.
  • Can help to prevent lactic acid when doing sports activities.
  • Can help against urinary tract infection because of its capability to reduce acid index in the urine.
  • Bicarbonate can also help to lose weight. Drinking it with water gives a feeling of saturation. The bicarbonate erases the PH value in the blood, and that on the other hand, helps the body burn fat. Actually, our metabolism increases with between 6-12 % adding bicarbonate.

Even better than adding bicarbonate is to eat greens that decompose to bicarbonate in our body! Eating greens like salad, broccoli, etc do help to digest the food. Bitter greens increase the stomach acid so that you can digest the food better. The acidity in the stomach is particularly important for melting the food and killing bacteria entering with food intake.

Well, you see that bicarbonate has several benefits, but limit it to half a teaspoon in a glass of warm water. Always be attentive to your body, if it doesn’t feel good, rather skip it!

PS. For everyone who wonders… Bicarbonate is NOT the same as baking powder. Baking powder contains several other things than bicarbonate, but you can still use it as baking powder.

Organic Trade Association welcomes Sustainable Food Trade Association in 2021

New consolidation strengthens organic’s mission to build sustainable food system and fight climate change

The Organic Trade Association announced the Sustainable Food Trade Association (SFTA) has consolidated with the Organic Trade Association in a meaningful partnership that will strengthen the organic sector’s voice in climate policy and sustainability issues in 2021, and boost the sector’s efforts to create an environmentally friendly, sustainable food system.

“The Organic Trade Association is honored to pick up the mantle of SFTA’s good mission and to help carry it forward. This consolidation will provide a broader and strengthened portfolio for organic to help mitigate climate change, and to build a food system that is healthy for us and our planet. The organic sector is starting off the new year strong, engaged and forward-thinking,” said Laura Batcha, CEO and Executive Director of the Organic Trade Association.

An Organic Trade Association Sustainable Food Trade Action Council has been formed, which consists of the former members of SFTA and is open to all members of the Organic Trade Association.

“The new council will continue to support and expand SFTA’s mission-driven work related to sustainability and climate. Consolidating into a council within the Organic Trade Association creates a new opportunity for all of us. The Organic Trade Association’s unique and progressive council structure, integrated into the trade association governance, is collaborative, resourced, and driven by member priorities. On Climate Day in 2017, SFTA helped launch the Climate Collaborative, a group of organic and natural products companies with the common goal to find innovative, new ways to help reverse climate change.

SFTA has developed a set of effective tools for organic businesses to build, measure and refine their sustainability programs that will be available to all Organic Trade Association members. Its COMPASS program provides consistent annual guidance using a variety of key sustainability tools from which companies can choose the ones that best fit their businesses. One of the options in the COMPASS program is the Climate Action Management Primer (CAMP), which helps farmers and businesses chart a climate strategy by identifying climate hotspots, measuring carbon sequestration and prioritizing actions to mitigate greenhouse gas emissions.

Lisa Braun, carbon accounting and sustainability expert and former Sustainability Technical Services Manager for SFTA, will be working with the Organic Trade Association to provide members with the expertise, tools and techniques to measure and manage their sustainability programs. A webinar to introduce and explain the SFTA tools will be held later this winter.

Sweden ahead of Denmark in the public sector organic food race

Sweden takes first, Denmark second and Norway lags at the bottom when it comes to how much organic food is served in canteens, kindergartens and other public sector workplaces across the three Nordic nations. This, according to the results of a new report by the University of Copenhagen. The report details plenty of potential for expanding the conversion to organic food service in the Danish public sector—a topic of discussion across the EU at the moment.

 

The governments of Denmark, Norway and Sweden are all keen on ramping up the amount of organic food being served in their hospital kitchens, kindergartens, canteens and other institutions. Doing so benefits the environment, biodiversity and animal welfare, not to mention that consumers are demanding organic. A new report by the University of Copenhagen’s Department of Food and Resource Economics compares the performance of these three countries in introducing more organic food to their public sectors.

The study reports Sweden as Scandinavia’s top performer, with a 39 percent share of organic food in their public sector. Denmark comes in at 22 percent and Norway, at just 1 percent. The Swedish experience demonstrates that large volumes of organic food procurement can be achieved nationally within the public sector and that there remains plenty of potential for expansion in Denmark.

"Sweden in particular, but also Denmark in part, should to be regarded as countries with successful track records in introducing organic meals into the public sector, while Norway's efforts seem to have failed," states Professor Carsten Daugbjerg, who is behind the report.

In Sweden, organic equates with health 

According to the study, the Swedish strategy has been to establish concrete targets for how much organic food should be procured by public kitchens, which municipalities then should live up to.

"At the same time, the Swedes have framed organic within a broader context, linking organic food with public health. This is as an important explanation for Sweden’s success in bringing organic foods into the public sector. However, it is probably also related to Swedish municipalities being more receptive to the authority and objectives coming from Stockholm," explains Professor Daugbjerg.

According to Daugbjerg, the effort to get organic foodstuffs into public sector kitchens in Denmark has been greater than in Sweden, an effort that has succeeded in linking organic food and sustainability, for example. However, the effort to link organic foods to health has been weaker in Denmark than in Sweden.

"Within the Danish public sector, there hasn’t been the same type of effort to connect public health with organic food, as there has in Sweden. In Sweden, they have a concept for healthy diets in the public sector called SMART, which links organic food to public health. There, municipalities actually use this concept in their menu planning and meal delivery," says Carsten Daugbjerg.

Demand must follow production

Within the EU, there is currently discussions on converting more farmland to organic farming. In fact, the EU would like 25 percent of its agricultural area to be organic, which would help protect the environment, among other things. To kickstart this development, there are proposals for special assistance schemes for farmers who switch from conventional to organic farming. However, according to Daugbjerg, this cannot stand on its own if the EU wants to reach its goal.

"In Denmark, there has been a great deal of focus on increasing demand as production expands. This strategy has been successful. By focusing on increasing supply through farmer incentives, there is a risk of oversupply and falling prices," he explains.

According to Carsten Daugbjerg, the Danish strategy has been successful in engaging market actors to  grow the market for organic products. The collaboration between the Ministry of Environment and Food and the organic sector, in particular Organic Denmark, has played a major role here.

"Over time, efforts to stimulate demand have ranged from motivating and assisting supermarket chains in their marketing of organic products, to engaging public sector kitchen staff. This occurred while production grew. And, I think the EU can learn a lot from this," states the Professor Daugbjerg.

Alongside Sweden, Austria and Switzerland, Denmark leads within the EU when it comes to sales of organic products. Nationally these products account for just under 12 percent of Denmark’s total food sales.
